Meat Stuffed Pancakes (Hungarian Style) – Hortobágyi Palacsinta


Instructions:

  1. Make the pancakes:
    • In a bowl, whisk flour, eggs, milk, water, and salt into a smooth batter.
    • Let rest for 15–20 minutes.
    • Cook thin pancakes in a lightly oiled pan (like crepes). Set aside.
  2. Prepare the filling:
    • Heat oil in a pan and sauté onion until soft.
    • Add paprika, then the chopped cooked meat.
    • Season with salt and pepper.
    • Stir in sour cream and mix until creamy.
  3. Fill the pancakes:
    • Place filling in the center of each pancake.
    • Fold like a parcel (roll or envelope style).
  4. Prepare the sauce:
    • Mix sour cream with paprika and a little broth or water.
    • Heat gently until smooth (do not boil).
  5. Bake (optional but traditional):
    • Place filled pancakes in a baking dish.
    • Pour sauce over them.
    • Bake at 180°C (350°F) for 15–20 minutes.
  6. Serve:
    • Serve warm with extra sauce on top.
