
Instructions
- Cook the potatoes
- Place potatoes in a large pot, cover with cold water, and add a generous pinch of salt.
- Bring to a boil, then simmer for 15โ20 minutes, until fork-tender.
- Drain & dry
- Drain potatoes well. Return them to the warm pot for a minute or two to evaporate excess moisture.
- Mash
- Mash potatoes with a potato masher or ricer until smooth.
- Mix in butter & milk
- Add butter first, then slowly pour in warm milk while mashing/stirring until creamy.
- Season with salt and pepper to taste.
- Serve
- Transfer to a serving bowl, top with a pat of butter, and sprinkle with fresh chives or parsley if desired.
