Instructions:

  1. Beat the eggs with sugar and vanilla sugar until light and fluffy.
  2. Add flour and baking powder, then bake in a tray at 180°C for about 10–12 minutes.
  3. Whip the cream with powdered sugar until stiff peaks form, then mix with mascarpone.
  4. Let the sponge cake cool, then cut it in half.
  5. Spread raspberry jam on the bottom layer, then add half of the cream.
  6. Place the second layer on top and spread the remaining cream evenly.
  7. Melt the chocolate with oil and pour over the top.
  8. Chill in the fridge for at least 3–4 hours before slicing.
