Ingredients
Crust
- 1Β½ cups graham cracker or digestive biscuit crumbs
- ΒΌ cup melted butter
- 2 tbsp sugar (optional)
Lemon Mascarpone Filling
- 8 oz (225 g) mascarpone cheese, softened
- Β½ cup powdered sugar
- Β½ cup heavy cream, cold
- Zest of 1 lemon
- 3 tbsp fresh lemon juice
- 1 tsp vanilla extract
Topping (optional)
- Lemon slices, berries, or powdered sugar
Instructions
- Mix crumbs with melted butter (and sugar). Press into a tart pan. Chill 15 minutes.
- Beat mascarpone with powdered sugar until smooth.
- Whip heavy cream to soft peaks and gently fold into mascarpone.
- Fold in lemon zest, lemon juice, and vanilla.
- Spread filling into crust and smooth top.
- Refrigerate 2β3 hours until set.
- Garnish, slice, and serve chilled.
