Lecsó – Hungarian Pepper & Tomato Stew

Ingredients:

  • 2 tbsp oil or lard
  • 2 large onions, sliced
  • 3–4 green bell peppers, sliced
  • 3–4 ripe tomatoes, chopped (or 1 can crushed tomatoes)
  • 1 tsp Hungarian sweet paprika
  • Salt and black pepper to taste
  • 1 tsp sugar (optional, balances acidity)
  • 2 cloves garlic (optional)
  • 1 smoked sausage, sliced (optional, traditional variation)

Instructions:

  1. Heat oil or lard in a large pan or pot over medium heat.
  2. Add onions and cook until soft and slightly golden.
  3. Add sliced peppers and cook for 5–7 minutes until they soften.
  4. Stir in paprika quickly (do not burn it).
  5. Add tomatoes and garlic if using.
  6. Season with salt, pepper, and a pinch of sugar.
  7. Simmer uncovered for 20–30 minutes, stirring occasionally, until thick and saucy.
  8. If using sausage, add it halfway through cooking.
