
Instructions:
In a large bowl, mix the flour, baking powder, sugar, vanilla sugar, and salt. Add the cold butter cut into small cubes and rub it into the flour until crumbly.
Add the eggs and lemon zest, then knead quickly into a smooth dough. Do not overwork the dough so it stays crumbly and soft.
Divide the dough into two equal parts. Roll out the first half and place it on a baking tray lined with parchment paper.
Spread a layer of jam evenly over the dough.
Roll out the second half of the dough and place it on top of the jam layer. Gently press down.
Bake in a preheated oven at 180°C (350°F) for about 25–35 minutes, until lightly golden.
Let it cool completely, then cut into squares and dust with powdered sugar before serving.
