
Ingredients:
- 300 g all-purpose flour
- 200 g butter (cold, cubed)
- 120 g sugar
- 1 egg yolk
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- Zest of 1 lemon (optional)
- 2–3 tbsp sour cream or milk (as needed)
Optional filling:
- Apricot jam or plum jam
Instructions:
- Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
- In a bowl, mix flour, baking powder, sugar, and salt.
- Add cold butter and rub into the flour until crumbly.
- Add egg yolk, vanilla, lemon zest, and sour cream (or milk).
- Mix until a soft dough forms. Do not overwork.
- Roll out the dough and cut into shapes (squares, strips, or rounds).
- Place on baking tray. Add a small amount of jam in the center if desired.
- Bake for 12–15 minutes, until lightly golden.
- Let cool completely.
