
Instructions
1. Prepare the Base
Heat the oil or lard in a large pot over medium heat. Add the chopped onion and cook until soft and translucent.
Remove the pot briefly from the heat and stir in the Hungarian paprika. This helps prevent the paprika from burning and becoming bitter.
2. Add the Vegetables
Add the garlic, caraway seeds, bell pepper, and tomato. Stir well and cook for a few minutes.
Add the potatoes and season with salt and black pepper.
3. Simmer
Pour in enough water or broth to almost cover the potatoes.
Bring to a gentle boil, then reduce the heat and simmer for about 25–30 minutes, stirring occasionally, until the potatoes are tender and the sauce has thickened.
If using sausage, add the slices during the last 10–15 minutes of cooking.
4. Serve
Taste and adjust the seasoning.
Sprinkle with fresh parsley and serve hot with crusty bread and pickles on the side.
