Hungarian Palacsinta (Crepes)

Ingredients:

  • 250 g all-purpose flour
  • 2 eggs
  • 500 ml milk
  • 100 ml sparkling water (or plain water)
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • Pinch of salt

Optional fillings:

  • Apricot jam
  • Chocolate spread
  • Sweetened cottage cheese
  • Ground walnuts with sugar

Instructions:

  1. In a large bowl, whisk together eggs, milk, sparkling water, sugar, oil, and salt.
  2. Gradually add the flour, whisking until the batter is smooth and lump-free.
  3. Let the batter rest for 15–20 minutes.
  4. Heat a lightly greased non-stick pan over medium heat.
  5. Pour a small amount of batter into the pan and swirl to form a thin layer.
  6. Cook for 1–2 minutes until lightly golden, then flip and cook the other side for 30–60 seconds.
  7. Repeat with the remaining batter.
  8. Fill with your favorite filling and roll or fold.
