🍲 Hungarian Meatballs (Húsgombóc)

🧾 Ingredients

For the meatballs:

  • 500 g (1 lb) ground beef (or beef + pork mix)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 tbsp milk
  • 1 tsp paprika (Hungarian paprika if possible)
  • Salt and black pepper (to taste)
  • 1 tbsp chopped parsley (optional)

For the sauce:

  • 2 tbsp oil or butter
  • 1 small onion, chopped
  • 1 tbsp flour
  • 1 tbsp paprika
  • 2 cups beef broth
  • 1/2 cup sour cream
  • Salt and pepper (to taste)

👨‍🍳 Instructions

1. Prepare the meatballs

  • In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, milk, paprika, salt, pepper, and parsley.
  • Mix well until combined.
  • Shape into small balls (about golf ball size).

2. Cook the meatballs

  • Heat a little oil in a pan.
  • Brown the meatballs on all sides (they don’t need to be fully cooked yet).
  • Remove and set aside.

3. Make the sauce

  • In the same pan, add oil/butter and cook chopped onion until soft.
  • Stir in flour and cook for 1 minute.
  • Add paprika (don’t burn it).
  • Slowly pour in beef broth while stirring.
  • Let it simmer and thicken.

4. Combine

  • Add meatballs back into the sauce.
  • Cover and simmer for 15–20 minutes until cooked through.

5. Finish with cream

  • Stir in sour cream.
  • Adjust salt and pepper.

🍽️ Serving Suggestions

Serve with:

  • Mashed potatoes 🥔
  • Egg noodles 🍝
  • Or crusty bread 🍞
