
🍲 Hungarian Meatballs (Húsgombóc)
🧾 Ingredients
For the meatballs:
- 500 g (1 lb) ground beef (or beef + pork mix)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup breadcrumbs
- 2 tbsp milk
- 1 tsp paprika (Hungarian paprika if possible)
- Salt and black pepper (to taste)
- 1 tbsp chopped parsley (optional)
For the sauce:
- 2 tbsp oil or butter
- 1 small onion, chopped
- 1 tbsp flour
- 1 tbsp paprika
- 2 cups beef broth
- 1/2 cup sour cream
- Salt and pepper (to taste)

👨🍳 Instructions
1. Prepare the meatballs
- In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, milk, paprika, salt, pepper, and parsley.
- Mix well until combined.
- Shape into small balls (about golf ball size).
2. Cook the meatballs
- Heat a little oil in a pan.
- Brown the meatballs on all sides (they don’t need to be fully cooked yet).
- Remove and set aside.
3. Make the sauce
- In the same pan, add oil/butter and cook chopped onion until soft.
- Stir in flour and cook for 1 minute.
- Add paprika (don’t burn it).
- Slowly pour in beef broth while stirring.
- Let it simmer and thicken.
4. Combine
- Add meatballs back into the sauce.
- Cover and simmer for 15–20 minutes until cooked through.
5. Finish with cream
- Stir in sour cream.
- Adjust salt and pepper.

- Mashed potatoes 🥔
- Egg noodles 🍝
- Or crusty bread 🍞
