
🇭🇺 Hungarian Meat Pancakes (Hortobágyi Palacsinta)
🧾 Ingredients:
For the pancakes (palacsinta):
- 250 g all-purpose flour
- 2 eggs
- 500 ml milk
- 100 ml sparkling water (optional)
- 1 pinch salt
- 1 tbsp oil
For the meat filling:
- 400 g chicken or pork (cooked and finely chopped or shredded)
- 1 large onion (finely chopped)
- 2 tbsp oil or lard
- 1 tbsp Hungarian sweet paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp tomato paste
- 100–150 ml broth
For the sauce:
- 200 ml sour cream
- 1 tbsp flour
- 1 tsp paprika
- 100 ml broth

👩🍳 Instructions:
- Make pancakes:
Mix flour, eggs, milk, sparkling water, salt, and oil into a smooth batter.
Cook thin pancakes in a lightly greased pan. Set aside.
- Prepare filling:
Sauté onion in oil until soft. Add paprika (remove from heat first to avoid burning). - Add chopped meat, tomato paste, broth, salt, and pepper. Cook until thick and flavorful.
- Fill pancakes:
Place meat filling in each pancake and roll them up.
- Make sauce:
Mix sour cream, flour, paprika, and broth in a pan. Heat gently until smooth and slightly thick.
- Bake or serve:
Place filled pancakes in a baking dish, pour sauce over them, and bake at 180°C (350°F) for 10–15 minutes (optional step), or serve directly.
