Hungarian Gulyásleves (Traditional Goulash Soup)

Instructions:

  1. Heat the oil in a large pot and sauté the onions until golden.
  2. Remove from heat briefly and stir in the paprika.
  3. Add the beef and cook until browned on all sides.
  4. Stir in the garlic, tomato, bell pepper, and caraway seeds.
  5. Pour in the broth or water and bring to a simmer.
  6. Cover and cook for about 1–1½ hours, until the beef is tender.
  7. Add the carrots, parsnips, and potatoes.
  8. Continue cooking for 25–30 minutes, until the vegetables are soft.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh parsley and serve hot.
