- Preheat oven to 350°F (175°C). Grease and line a 9×13-inch (23×33 cm) baking pan.
- Make the batter
- In a bowl, whisk together eggs and sugar until pale and fluffy.
- Add oil, milk, and vanilla. Mix well.
- Sift in flour, baking powder, and salt. Stir until smooth.
- Add to pan
- Pour batter evenly into prepared pan.
- Arrange fruit on top (cut larger fruit like plums/apricots into halves or quarters). They will sink slightly during baking.
- Bake for 30–35 minutes, or until golden and a toothpick inserted comes out clean.
- Finish
- Cool slightly, then dust generously with powdered sugar.
- Cut into squares and serve warm or at room temperature.
