Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch (23×33 cm) baking pan.
  2. Make the batter
    • In a bowl, whisk together eggs and sugar until pale and fluffy.
    • Add oil, milk, and vanilla. Mix well.
    • Sift in flour, baking powder, and salt. Stir until smooth.
  3. Add to pan
    • Pour batter evenly into prepared pan.
    • Arrange fruit on top (cut larger fruit like plums/apricots into halves or quarters). They will sink slightly during baking.
  4. Bake for 30–35 minutes, or until golden and a toothpick inserted comes out clean.
  5. Finish
    • Cool slightly, then dust generously with powdered sugar.
    • Cut into squares and serve warm or at room temperature.
