Hungarian Flourless Hazelnut Cake

Ingredients:

  • 200 g ground hazelnuts
  • 5 eggs, separated
  • 120 g sugar
  • 1 tsp vanilla extract
  • 1 tbsp cocoa powder (optional, for richer flavor)
  • Pinch of salt
  • Butter (for greasing pan)

Optional topping:

  • Powdered sugar
  • Melted chocolate or chocolate glaze

Instructions:

  1. Preheat oven to 170°C (340°F). Grease and line a cake pan.
  2. Beat egg whites with a pinch of salt until soft peaks form.
  3. Gradually add sugar and continue beating until stiff peaks form.
  4. In another bowl, mix egg yolks with vanilla.
  5. Fold yolk mixture into egg whites gently.
  6. Add ground hazelnuts (and cocoa if using) and fold carefully until combined.
  7. Pour batter into the prepared pan.
  8. Bake for 30–35 minutes, until set and lightly golden.
  9. Let cool completely before removing from pan.
