Hungarian Diós Bejgli (Old Fashioned Nut Roll)

Ingredients:

Dough:

  • 500 g all-purpose flour
  • 200 g butter (softened)
  • 2 egg yolks
  • 200 ml milk
  • 25 g fresh yeast (or 7 g dry yeast)
  • 80 g sugar
  • 1 pinch salt

Walnut filling:

  • 300 g ground walnuts
  • 150 g sugar
  • 100 ml milk
  • Zest of 1 lemon
  • 1 tsp cinnamon (optional)
  • 1–2 tbsp honey (optional)

Instructions:

  1. Activate yeast:
    Mix warm milk, a little sugar, and yeast. Let it foam for 10 minutes.
  2. Make dough:
    Combine flour, butter, sugar, salt, egg yolks, and yeast mixture. Knead into a smooth dough. Let rest 30–60 minutes.
  3. Prepare filling:
    Heat milk and mix with walnuts, sugar, lemon zest, and cinnamon. Let it cool.
  4. Shape rolls:
    Divide dough into 2 parts. Roll into rectangles, spread filling evenly, then roll up tightly.
  5. Rest & glaze:
    Place on tray, brush with egg yolk, let rest, then brush again for a shiny cracked top.
  6. Bake:
    Bake at 180°C for 30–35 minutes until golden.
