
Ingredients:
Dough:
- 500 g all-purpose flour
- 200 g butter (softened)
- 2 egg yolks
- 200 ml milk
- 25 g fresh yeast (or 7 g dry yeast)
- 80 g sugar
- 1 pinch salt
Walnut filling:
- 300 g ground walnuts
- 150 g sugar
- 100 ml milk
- Zest of 1 lemon
- 1 tsp cinnamon (optional)
- 1–2 tbsp honey (optional)

Instructions:
- Activate yeast:
Mix warm milk, a little sugar, and yeast. Let it foam for 10 minutes. - Make dough:
Combine flour, butter, sugar, salt, egg yolks, and yeast mixture. Knead into a smooth dough. Let rest 30–60 minutes. - Prepare filling:
Heat milk and mix with walnuts, sugar, lemon zest, and cinnamon. Let it cool. - Shape rolls:
Divide dough into 2 parts. Roll into rectangles, spread filling evenly, then roll up tightly. - Rest & glaze:
Place on tray, brush with egg yolk, let rest, then brush again for a shiny cracked top. - Bake:
Bake at 180°C for 30–35 minutes until golden.
