Hungarian Crepes (Palacsinta)

Ingredients:

  • 250 g all-purpose flour
  • 2 eggs
  • 500 ml milk
  • 100 ml sparkling water (or regular water)
  • 1 tbsp sugar (optional for sweet crepes)
  • 1 tbsp oil
  • Pinch of salt

Instructions:

  1. In a bowl, whisk eggs, milk, sparkling water, oil, sugar, and salt.
  2. Gradually add flour and whisk until the batter is smooth and thin.
  3. Let the batter rest for 15–20 minutes.
  4. Heat a lightly greased non-stick pan over medium heat.
  5. Pour a small ladle of batter and swirl to coat the pan thinly.
  6. Cook for 1–2 minutes until lightly golden, then flip and cook 30–60 seconds.
  7. Repeat until all batter is used.

Fillings (traditional):

  • Apricot jam
  • Sweetened cottage cheese (túró)
  • Chocolate spread
  • Ground walnuts with sugar
