Instructions:

  1. In a bowl, whisk eggs, milk, sparkling water, sugar, salt, and oil.
  2. Gradually add flour and mix until smooth and thin.
  3. Let the batter rest for 20–30 minutes.
  4. Heat a lightly greased pan.
  5. Pour a small amount of batter and swirl to coat the pan thinly.
  6. Cook each side for about 1 minute until lightly golden.
