Hungarian Chimney Cake (Kürtőskalács) Recipe 🇭🇺

📝 Ingredients:

  • 500 g (4 cups) all-purpose flour
  • 25 g (2 tbsp) fresh yeast or 7 g dry yeast
  • 250 ml (1 cup) warm milk
  • 50 g (¼ cup) sugar (plus extra for sprinkling)
  • 50 g (3½ tbsp) butter, softened
  • 2 large eggs
  • Pinch of salt
  • 1 tsp vanilla extract
  • Toppings: cinnamon sugar, ground nuts, cocoa, or granulated sugar

🥣 Instructions:

1. Make the dough:

  1. In a small bowl, dissolve yeast and 1 tsp sugar in warm milk. Let it sit 5–10 minutes until foamy.
  2. In a large bowl, combine flour, remaining sugar, and salt.
  3. Add yeast mixture, eggs, butter, and vanilla.
  4. Knead until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.

2. Shape the cakes:

  1. Roll the dough into a rectangle about ½ cm (¼ inch) thick.
  2. Cut into long strips, about 2–3 cm (1 inch) wide.
  3. Wrap the strips around a greased cylindrical form (like a wooden rolling pin or metal cone). Overlap slightly.

3. Add toppings:

  • Brush lightly with melted butter, then roll in sugar, cinnamon, or nuts.

4. Bake:

  1. Preheat oven to 180°C (350°F).
  2. Place the cylinders on a baking tray.
  3. Bake 15–20 minutes, turning occasionally, until golden brown and caramelized.
  4. Remove from form and let cool slightly.
