Hungarian Cheese Biscuits (Pogácsa)

Ingredients:

  • 500 g all-purpose flour
  • 250 g butter (cold, cubed)
  • 25 g fresh yeast (or 7 g dry yeast)
  • 150 ml warm milk
  • 1 tsp sugar
  • 1 tsp salt
  • 1 egg (for dough)
  • 1 egg (for brushing)
  • 150 g grated cheese (Trappista or any hard cheese)

Instructions:

  1. Dissolve yeast and sugar in warm milk. Let it sit for 5–10 minutes until foamy.
  2. In a bowl, mix flour and salt.
  3. Add butter and rub into the flour until crumbly.
  4. Add yeast mixture and 1 egg, then knead into a soft dough.
  5. Cover and let rise for 1 hour.
  6. Roll out the dough and sprinkle half of the grated cheese over it.
  7. Fold the dough, roll again, and repeat for extra layers (optional but traditional).
  8. Cut out small rounds using a glass or cutter.
  9. Place on a baking tray and brush with beaten egg.
  10. Sprinkle remaining cheese on top.
  11. Bake at 180°C (350°F) for 15–20 minutes until golden.
