Homemade Mexican Pizza – Crispy, Cheesy, and Flavor-Packed!

This delicious twist on a classic pizza is loaded with seasoned beef, refried beans, and melty cheese, making it the perfect comfort food!

Ingredients:

1 lb lean ground beef

1 packet taco seasoning (1 oz)

½ cup water

6 medium flour tortillas

1 can (16 oz) refried beans

1 can (10 oz) red enchilada sauce

1 cup shredded cheddar cheese

1 cup shredded pepper-jack cheese

1 Roma tomato (diced)

1 green onion (diced)

1 small can sliced black olives

Instructions:

Preheat oven to 375°F. Spray baking sheets and place three tortillas on each.

Crisp tortillas by baking for 3-5 minutes, flipping, then baking for another 2-5 minutes until golden.

Cook ground beef, drain, then stir in taco seasoning and water. Simmer for 10 minutes.

Heat refried beans in the microwave.

Assemble pizzas: Spread refried beans on a tortilla, top with beef, another tortilla, enchilada sauce, cheese, tomato, green onion, and olives.

Repeat to make 3 pizzas.

Bake for 5 minutes, until cheese is bubbly.
