Instructions

1. Sear the Roast

  1. Pat the roast dry.
  2. Season generously with salt and pepper.
  3. Heat the oil in a heavy pot and sear the roast on all sides until golden (4–5 minutes per side).
    • This step gives the roast deep flavor.

2. Build the Fall Flavors

Add into the pot:

  • sliced onion
  • garlic
  • Worcestershire
  • tomato paste
  • herbs

Cook 2 minutes to release the aromas.


3. Add the Broth & Vegetables

  1. Pour in the beef broth.
  2. Add carrots and potatoes around the roast.

4. Slow Cook Until Magical

Choose one method:

Oven:

Cover and cook at 160°C / 325°F for 3–4 hours
until fork-tender.

Slow Cooker:

Low 8 hours or high 4–5 hours.

Stovetop:

Simmer covered on low for 3–3.5 hours.


5. Make the Gravy (Optional but Perfect!)

Remove roast and vegetables.
Whisk cornstarch with 2–3 tbsp cold water.
Add to the pot juice, simmer 1–2 minutes until thick and glossy.
