1. Prepare the dry mixture
In a bowl, whisk together:
- flour
- sugar
- baking powder
- baking soda
- salt
2. Mix the wet ingredients
In another bowl, whisk:
- eggs
- oil
- milk
- vanilla
3. Combine
Pour wet ingredients into the dry.
Mix gently until combined β do NOT overmix.
Lumps are normal and help keep the muffins fluffy!
4. Bake
- Pour batter into muffin cups (ΒΎ full).
- Bake at 180Β°C / 350Β°F for 18β22 minutes,
or until tops are golden and springy.

β Fill cups ΒΎ full for big, round tops
β Let them cool 10 minutes before eating
