Easy Hungarian Cottage Cheese Strudel (Túrós rétes)


Instructions

1. Prepare the filling

  1. In a bowl, mix cottage cheese, eggs, sugar, and vanilla.
  2. Add lemon zest and sour cream.
  3. Stir in semolina or breadcrumbs to thicken slightly.
  4. Let sit 5–10 minutes.

2. Prepare the dough

  1. Lay one sheet of phyllo on a clean surface.
  2. Brush lightly with melted butter.
  3. Layer 2–3 sheets for strength and flakiness.

3. Fill and roll

  1. Spread filling along one edge of the dough.
  2. Leave borders on the sides.
  3. Roll tightly into a log shape.
  4. Place seam-side down on a baking tray.
  5. Repeat for remaining dough.

4. Bake

  • Preheat oven to 180°C (350°F)
  • Brush top with butter
  • Bake 30–35 minutes until golden and crisp

5. Finish

  • Let cool slightly
  • Dust generously with powdered sugar
  • Slice and serve warm or cold
