Easy Hungarian Cottage Cheese Strudel (Túrós rétes)

The classic Túrós rétes is a soft, creamy, slightly tangy strudel wrapped in thin pastry layers. This is an easy version using ready-made phyllo or strudel dough, so you don’t need to stretch dough by hand.


Ingredients

Filling

  • 500 g cottage cheese (túró or farmer’s cheese)
  • 2 eggs
  • 80–120 g sugar (to taste)
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional but traditional)
  • 2–3 tbsp semolina or breadcrumbs (to absorb moisture)
  • 2–3 tbsp sour cream (for extra creaminess)

For assembly

  • 6–10 sheets phyllo dough (or strudel pastry)
  • 80 g melted butter
  • Powdered sugar for dusting
