Cocoa Swirl Sweet Bread (Kakaós Kalács)

Instructions

  1. Make the dough:
    • In a bowl, combine warm milk, yeast, and 1 tsp sugar. Let it sit 5–10 minutes until foamy.
    • Add flour, sugar, melted butter, egg yolks, and salt. Knead until smooth and elastic (8–10 minutes).
    • Cover and let rise for 1–1.5 hours, until doubled in size.
  2. Prepare the filling:
    • Mix cocoa powder with sugar, then stir in melted butter to form a spreadable paste.
  3. Shape the bread:
    • Roll the dough into a large rectangle (about ½ inch thick).
    • Spread the cocoa filling evenly.
    • Roll tightly into a log and place in a greased loaf pan.
    • Cover and let rise again for 30–40 minutes.
  4. Bake:
    • Brush the top with egg yolk + milk.
    • Bake at 350°F (175°C) for 30–35 minutes, until golden brown.
  5. Cool & serve:
    • Let cool slightly before slicing to reveal the cocoa swirls.

Tips

  • For extra softness, replace part of the milk with sour cream.
  • Some Hungarian families add vanilla sugar or even cinnamon to the cocoa filling.
  • Delicious served slightly warm with coffee or tea.
