Mix graham crumbs + melted butter + sugar + cinnamon.
Press firmly into bottom of a 9-inch springform pan.

In a skillet, cook:
- Butter
- Apples
- Brown sugar
- Cinnamon
- Nutmeg
- Lemon juice
Cook 5β7 minutes until softened.

7. Bake
Bake 55β70 minutes, until edges are set and the center is slightly jiggly.
Turn off the oven, crack the door open, and let cheesecake cool inside for 1 hour (prevents cracking).
Then refrigerate at least 4 hours, or overnight for best texture.
