Green Bean Soup

Ingredients:

  • 400–500 g green beans (fresh or frozen, trimmed)
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 tbsp oil or butter
  • 1 tbsp flour (optional, for thickening)
  • 1–1.2 L water or vegetable/chicken broth
  • 1 tsp paprika (optional)
  • Salt and black pepper to taste
  • 1 tbsp vinegar or lemon juice (optional)

Instructions:

  1. Heat oil or butter in a pot and sauté the onion until soft.
  2. Add garlic and carrots, cook for 2–3 minutes.
  3. Add green beans and stir well.
  4. Pour in water or broth and bring to a boil.
  5. Reduce heat and simmer for 20–25 minutes until beans are tender.
  6. (Optional) Mix flour with a little water and stir in to slightly thicken the soup.
  7. Season with salt, pepper, and paprika if using.
  8. Add vinegar or lemon juice for a light tangy taste
