Hungarian Shortbread (Omlós Teasütemény)

Ingredients:

  • 300 g all-purpose flour
  • 200 g butter (cold, cubed)
  • 120 g sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt
  • Zest of 1 lemon (optional)
  • 2–3 tbsp sour cream or milk (as needed)

Optional filling:

  • Apricot jam or plum jam

Instructions:

  1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a bowl, mix flour, baking powder, sugar, and salt.
  3. Add cold butter and rub into the flour until crumbly.
  4. Add egg yolk, vanilla, lemon zest, and sour cream (or milk).
  5. Mix until a soft dough forms. Do not overwork.
  6. Roll out the dough and cut into shapes (squares, strips, or rounds).
  7. Place on baking tray. Add a small amount of jam in the center if desired.
  8. Bake for 12–15 minutes, until lightly golden.
  9. Let cool completely.
