Zserbo Szelet (Hungarian Gerbeaud Cake)

Ingredients:

Dough:

  • 500 g all-purpose flour
  • 250 g butter, softened
  • 50 g sugar
  • 1 egg
  • 7 g dry yeast
  • 120 ml warm milk
  • Pinch of salt

Filling:

  • 250 g ground walnuts
  • 150 g apricot jam
  • 100 g sugar

Chocolate Glaze:

  • 150 g dark chocolate
  • 2 tbsp butter

Instructions:

  1. Dissolve the yeast in the warm milk and let stand for 5 minutes.
  2. In a bowl, combine flour, sugar, and salt.
  3. Add butter, egg, and yeast mixture. Knead into a smooth dough.
  4. Divide the dough into 3 equal portions.
  5. Roll out the first portion and place it in a greased baking pan.
  6. Spread half of the apricot jam over the dough and sprinkle with half of the walnut-sugar mixture.
  7. Add the second rolled-out dough layer and repeat with the remaining jam and walnut mixture.
  8. Top with the final dough layer.
  9. Let rest for 30 minutes.
  10. Bake at 180°C (350°F) for 35–40 minutes, or until lightly golden.
  11. Allow the cake to cool completely.
  12. Melt the chocolate with the butter and spread evenly over the top.
  13. Let the glaze set before slicing into squares.
