Hungarian Goulash

Ingredients:

  • 500 g beef chuck, cut into cubes
  • 2 tbsp vegetable oil or lard
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Hungarian paprika
  • 1 green bell pepper, chopped
  • 1 tomato, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 tsp caraway seeds (optional)
  • 1.5 L beef broth or water
  • Salt and black pepper to taste

Instructions:

  1. Heat the oil in a large pot and sauté the onions until golden.
  2. Stir in the garlic and paprika.
  3. Add the beef and cook until browned on all sides.
  4. Add the bell pepper, tomato, and caraway seeds.
  5. Pour in the broth or water and bring to a simmer.
  6. Cover and cook for about 1½ hours, or until the beef is tender.
  7. Add the carrots and potatoes.
  8. Continue cooking for 25–30 minutes, until the vegetables are soft.
  9. Season with salt and pepper to taste.
  10. Serve hot.
