🇭🇺 Hungarian Beigli (Walnut or Poppy Seed Roll)

🧾 Ingredients

Dough:

  • 500 g all-purpose flour
  • 250 g butter, softened
  • 25 g fresh yeast (or 7 g active dry yeast)
  • 100 ml milk, lukewarm
  • 50 g sugar
  • 2 egg yolks
  • 1 whole egg
  • Pinch of salt

Walnut Filling:

  • 250 g ground walnuts
  • 100 g sugar
  • 100 ml milk
  • 1 tsp vanilla extract
  • Zest of 1 lemon

OR Poppy Seed Filling:

  • 250 g ground poppy seeds
  • 100 g sugar
  • 100 ml milk
  • 1 tsp vanilla extract
  • Zest of 1 lemon

For Brushing:

  • 1 egg, beaten

👩‍🍳 Instructions

  1. Dissolve yeast in warm milk with a little sugar. Let stand for 5–10 minutes.
  2. Mix flour, sugar, and salt. Add butter, egg yolks, egg, and yeast mixture. Knead into a smooth dough.
  3. Divide dough into 2 equal portions and let rest for 30 minutes.
  4. For the filling, heat milk and sugar, then stir in walnuts (or poppy seeds), vanilla, and lemon zest. Cool completely.
  5. Roll each dough portion into a rectangle.
  6. Spread filling evenly over the dough, leaving a small border around the edges.
  7. Roll up tightly like a jelly roll and place seam-side down on a baking sheet.
  8. Brush with beaten egg and let rest for 20 minutes. Brush again.
  9. Bake at 180°C (350°F) for 30–35 minutes until golden brown.
  10. Cool completely before slicing and serving.
