
🧾 Ingredients
Dough:
- 500 g all-purpose flour
- 250 g butter, softened
- 25 g fresh yeast (or 7 g active dry yeast)
- 100 ml milk, lukewarm
- 50 g sugar
- 2 egg yolks
- 1 whole egg
- Pinch of salt
Walnut Filling:
- 250 g ground walnuts
- 100 g sugar
- 100 ml milk
- 1 tsp vanilla extract
- Zest of 1 lemon
OR Poppy Seed Filling:
- 250 g ground poppy seeds
- 100 g sugar
- 100 ml milk
- 1 tsp vanilla extract
- Zest of 1 lemon
For Brushing:
- 1 egg, beaten
👩🍳 Instructions
- Dissolve yeast in warm milk with a little sugar. Let stand for 5–10 minutes.
- Mix flour, sugar, and salt. Add butter, egg yolks, egg, and yeast mixture. Knead into a smooth dough.
- Divide dough into 2 equal portions and let rest for 30 minutes.
- For the filling, heat milk and sugar, then stir in walnuts (or poppy seeds), vanilla, and lemon zest. Cool completely.
- Roll each dough portion into a rectangle.
- Spread filling evenly over the dough, leaving a small border around the edges.
- Roll up tightly like a jelly roll and place seam-side down on a baking sheet.
- Brush with beaten egg and let rest for 20 minutes. Brush again.
- Bake at 180°C (350°F) for 30–35 minutes until golden brown.
- Cool completely before slicing and serving.
