Hungarian Raspberry Mascarpone Cottage Cheese Sponge Roll – Don’t Lose This Recipe!

Ingredients:

Sponge:

  • 5 eggs
  • 120 g sugar
  • 120 g flour
  • 1 tsp baking powder (optional)
  • Pinch of salt

Filling:

  • 250 g mascarpone
  • 200 g cottage cheese (túró)
  • 2–3 tbsp sugar
  • 1 tsp vanilla sugar
  • 150–200 g raspberries (fresh or frozen)

Instructions:

  1. Beat eggs and sugar until light and fluffy.
  2. Add flour, baking powder, and salt, then mix gently.
  3. Spread on a baking tray and bake at 180°C for 10–12 minutes.
  4. Roll sponge while still warm and let cool.
  5. Mix mascarpone, cottage cheese, sugar, and vanilla.
  6. Spread cream over sponge and add raspberries.
  7. Roll tightly into a log shape.
  8. Chill before slicing and serving.
