🇭🇺 Hungarian Smoked Sausage and Potato Stew (Krumplis Kolbász)

🛒 Ingredients:

  • 2 tablespoons oil or lard
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 250–300 g (9–10 oz) smoked sausage, sliced
  • 1 teaspoon Hungarian sweet paprika
  • ½ teaspoon smoked paprika (optional)
  • 4–5 medium potatoes, peeled and diced
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 1 green bell pepper, chopped
  • 1 tablespoon tomato paste (optional)
  • 800 ml (3–3½ cups) water or broth
  • 1 bay leaf
  • Salt and pepper to taste

Optional:

  • ½ teaspoon caraway seeds
  • Pinch of hot paprika for heat

👩‍🍳 Instructions:

  1. Sauté the onion:
    Heat oil in a large pot. Cook chopped onion until soft and lightly golden. Add garlic and cook briefly.
  2. Brown the sausage:
    Add sliced smoked sausage and cook for a few minutes to release its flavor.
  3. Add paprika:
    Remove from heat and stir in paprika to avoid burning.
  4. Build the stew:
    Add potatoes, tomato, bell pepper, tomato paste, bay leaf, and caraway seeds if using.
  5. Simmer:
    Pour in water or broth, bring to a boil, then reduce heat and simmer for 25–30 minutes until potatoes are tender.
  6. Season:
    Add salt, pepper, and optional hot paprika to taste.
  7. Serve:
    Serve hot with fresh bread.
