Hungarian Goulash – A Hearty Stew Steeped in Tradition

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable oil or lard
  • 2 large onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp Hungarian paprika
  • 1 tsp caraway seeds
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 2 potatoes, diced
  • 1 carrot, sliced
  • 1 red bell pepper, chopped
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Cook onions until soft and golden.
  2. Add garlic, paprika, and caraway seeds; stir for about 1 minute.
  3. Add beef cubes and cook until browned on all sides.
  4. Stir in tomato paste and pour in beef broth.
  5. Bring to a simmer, cover, and cook 1–1½ hours until beef becomes tender.
  6. Add potatoes, carrots, and bell pepper.
  7. Continue cooking 20–30 minutes until vegetables are tender.
  8. Season with salt and pepper, garnish with parsley, and serve hot.
