Ingredients (12 muffins)
- 200 g (1½ cups) all-purpose flour
- 120 g (½ cup) sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- Pinch of salt
- 2 eggs
- 120 ml (½ cup) milk
- 80 ml (⅓ cup) vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 200 g (1 cup) pitted cherries (fresh or frozen)
Instructions
- Preheat oven to 180°C (350°F).
- In a bowl mix flour, baking powder, baking soda, salt, and sugar.
- In another bowl whisk eggs, milk, oil, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fold in the cherries.
- Fill muffin cups about ¾ full.
- Bake 18–22 minutes until golden and a toothpick comes out clean.
