Káposztás Tészta is a simple, rustic comfort dish from Hungary. Sweet caramelized cabbage tossed with tender egg noodles — lightly seasoned with pepper and sometimes a touch of sugar. It’s humble, cozy, and surprisingly addictive 🇭🇺
📝 Ingredients (4 servings)
- 12 oz (340 g) wide egg noodles
- 1 medium head green cabbage (about 2 lbs), finely shredded
- 3 tablespoons oil, butter, or lard
- 1–2 tablespoons sugar (optional, traditional)
- 1 teaspoon salt (plus more for pasta water)
- 1 teaspoon freshly ground black pepper
👩🍳 Instructions
1️⃣ Cook the Noodles
Bring a large pot of salted water to a boil.
Cook egg noodles until al dente.
Drain and set aside.
2️⃣ Prepare the Cabbage
Remove tough outer leaves and core.
Finely shred the cabbage.
3️⃣ Caramelize
Heat oil or butter in a large skillet over medium heat.
Add cabbage and salt.
Cook slowly, stirring often, for about 20–30 minutes until soft and golden brown.
If making the sweet version, sprinkle in sugar halfway through cooking to help caramelize.
4️⃣ Season
Add black pepper generously — this dish should have a noticeable peppery flavor.
5️⃣ Combine
Add cooked noodles to the skillet and toss until evenly coated and heated through.
