
Szilvás Gombóc is a beloved traditional dessert from Hungary. Soft potato dough wrapped around sweet-tart plums, boiled until tender, then rolled in buttery toasted breadcrumbs — pure comfort and nostalgia 🇭🇺
📝 Ingredients
🥔 Dough
- 2 lbs (1 kg) starchy potatoes
- 1 egg
- 1½ cups (about 180 g) all-purpose flour
- 1 tablespoon semolina (optional, helps texture)
- 1 pinch salt
🍑 Filling
- 8–10 small Italian plums (pitted)
- 2–3 tablespoons sugar
- 1 teaspoon ground cinnamon
🌾 Coating
- 1 cup breadcrumbs
- 3 tablespoons butter
- 2 tablespoons sugar
👩🍳 Instructions
1️⃣ Cook the Potatoes
- Boil potatoes whole (with skin) until tender.
- Peel while warm and mash until smooth.
- Let cool slightly.
2️⃣ Make the Dough
- Mix mashed potatoes with egg, salt, semolina, and flour.
- Knead gently until a soft dough forms (don’t overwork).
3️⃣ Prepare the Plums
- Mix sugar and cinnamon.
- Place a little of the mixture inside each pitted plum.
4️⃣ Form Dumplings
- Roll dough to about ¼ inch thick.
- Cut into squares.
- Place a plum in the center of each square and wrap dough around it, sealing well.
- Roll gently into a ball.
5️⃣ Boil
- Bring a large pot of salted water to boil.
- Drop dumplings in carefully.
- Cook 8–10 minutes, until they float and are tender.
6️⃣ Toast the Breadcrumbs
- Melt butter in a pan.
- Add breadcrumbs and toast until golden.
- Stir in sugar.
7️⃣ Finish
- Roll cooked dumplings in the sweet toasted breadcrumbs.
