Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)
  • ½ cup (115 g) unsalted butter or oil
  • 1 cup (200 g) brown sugar
  • 1 cup (240 ml) buttermilk
  • 1 tsp vanilla extract
  • 1–2 cups mixed dried fruits (raisins, cherries, cranberries, chopped dates)
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat oven:
    350°F (175°C). Grease and line a 9-inch loaf pan.
  2. Mix dry ingredients:
    In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. Cream butter and sugar:
    In another bowl, beat butter (or oil) and sugar until smooth.
  4. Add buttermilk and vanilla:
    Stir in buttermilk and vanilla extract until combined.
  5. Combine:
    Gradually fold dry ingredients into wet mixture. Stir in dried fruits and nuts.
  6. Bake:
    Pour batter into prepared pan. Bake 50–60 minutes or until a toothpick comes out clean.
  7. Cool and serve:
    Let cool in pan for 10 minutes, then transfer to a wire rack. Slice and enjoy.
