
Hungarian Paprika Potatoes (Paprikás Krumpli) 🇭🇺🥔🌶️
A true Hungarian comfort dish—simple, hearty, and full of paprika flavor. Paprikás krumpli is an everyday classic made with potatoes, onions, paprika, and sausage.
🥔 Ingredients
- 2 lbs (900 g) potatoes, peeled and cut into chunks
- 2 tbsp oil or lard
- 1 large onion, finely chopped
- 2 tbsp sweet Hungarian paprika
- 8 oz (225 g) Hungarian sausage (kolbász), sliced
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 2 cups water or broth
- Optional: pinch of hot paprika
🍲 Instructions
- Heat oil or lard in a pot over medium heat.
- Add onion and cook until soft and lightly golden.
- Remove from heat and stir in paprika (do not burn).
- Add sausage and stir briefly.
- Add potatoes, salt, pepper, and water/broth.
- Bring to a gentle boil, then simmer uncovered 25–30 minutes, until potatoes are tender and sauce is thick.
🍽️ To Serve
- With fresh bread
- Pickles or cucumber salad on the side
- Sometimes topped with a spoon of sour cream
