
Karfiol Leves – Hungarian Cauliflower Soup 🇭🇺🥣
A light, comforting everyday soup in Hungarian homes. Karfiol leves is simple, gently paprika-spiced, and often finished with soft egg dumplings or egg drop.
🥦 Ingredients
- 2 tbsp oil or lard
- 1 small onion, finely chopped
- 1 tbsp all-purpose flour
- 1 tsp sweet Hungarian paprika
- 1 small head cauliflower, cut into florets
- 5–6 cups water or light broth
- 1 tsp salt (or to taste)
- ¼ tsp black pepper
Optional Add-ins (Traditional)
- 1 carrot, sliced
- 1 egg (for egg drop)
- Chopped parsley
🍲 Instructions
- Heat oil or lard in a pot over medium heat.
- Add onion and sauté until soft (not browned).
- Stir in flour and cook briefly until pale.
- Remove from heat and mix in paprika.
- Slowly add water or broth, stirring to avoid lumps.
- Add cauliflower, salt, and pepper.
- Bring to a gentle boil, then simmer 15–20 minutes until cauliflower is tender.
Optional Egg Drop
- Lightly beat 1 egg and drizzle into simmering soup while stirring gently.
🍽️ To Serve
- Hot, with fresh bread
- Sprinkle with parsley if desired
