A light, comforting everyday soup in Hungarian homes. Karfiol leves is simple, gently paprika-spiced, and often finished with soft egg dumplings or egg drop.


🥦 Ingredients

  • 2 tbsp oil or lard
  • 1 small onion, finely chopped
  • 1 tbsp all-purpose flour
  • 1 tsp sweet Hungarian paprika
  • 1 small head cauliflower, cut into florets
  • 5–6 cups water or light broth
  • 1 tsp salt (or to taste)
  • ¼ tsp black pepper

Optional Add-ins (Traditional)

  • 1 carrot, sliced
  • 1 egg (for egg drop)
  • Chopped parsley

🍲 Instructions

  1. Heat oil or lard in a pot over medium heat.
  2. Add onion and sauté until soft (not browned).
  3. Stir in flour and cook briefly until pale.
  4. Remove from heat and mix in paprika.
  5. Slowly add water or broth, stirring to avoid lumps.
  6. Add cauliflower, salt, and pepper.
  7. Bring to a gentle boil, then simmer 15–20 minutes until cauliflower is tender.

Optional Egg Drop

  • Lightly beat 1 egg and drizzle into simmering soup while stirring gently.
