
Recipe of the Day: Hungarian Chicken Paprikás & Dumplings (Csirke Paprikás Galuskával) 🇭🇺
A classic Hungarian comfort dish—tender chicken in a rich paprika-sour cream sauce, served with soft homemade dumplings.
🧄 Ingredients
For the Chicken Paprikás
- 2 lbs (900 g) bone-in, skin-on chicken pieces
- 2 tbsp oil or lard
- 2 medium onions, finely chopped
- 3 tbsp sweet Hungarian paprika
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 1 cup chicken broth or water
- 1 cup sour cream
- 1 tbsp flour
For the Dumplings (Nokedli/Galuska)
- 2 cups all-purpose flour
- 2 eggs
- ¾ cup water
- 1 tsp salt
🍲 Instructions
1. Make the Paprikás
- Heat oil or lard in a large pot over medium heat.
- Add onions and sauté until soft and golden.
- Remove pot from heat, stir in paprika (important so it doesn’t burn).
- Add chicken, salt, pepper, and broth.
- Cover and simmer gently for 35–40 minutes, until chicken is tender.
2. Finish the Sauce
- Mix sour cream with flour until smooth.
- Slowly stir into the pot.
- Simmer 5–10 minutes until sauce thickens. Do not boil hard.
3. Prepare the Dumplings
- Mix flour, eggs, water, and salt into a sticky batter.
- Bring a pot of salted water to a boil.
- Drop small portions of batter into boiling water (or use a dumpling maker).
- When dumplings float, cook 1–2 more minutes, then drain.
🍽️ To Serve
Serve the chicken and creamy paprika sauce over the dumplings. Optional garnish: chopped parsley or a spoon of extra sour cream.
