🛒 Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg (optional)
  • ½ cup brown sugar
  • 2 eggs
  • ½ cup vegetable oil or melted butter
  • ½ cup milk or orange juice
  • 1 tsp vanilla extract
  • 1½ cups mixed dried fruits
    (raisins, chopped dates, cranberries, candied orange peel)
  • ½ cup chopped nuts (walnuts or almonds – optional)

  1. Preheat oven to 350°F (180°C). Line a mini muffin pan.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, beat eggs with brown sugar until smooth.
  4. Add oil, milk (or juice), and vanilla. Mix well.
  5. Gradually fold dry ingredients into wet ingredients.
  6. Stir in dried fruits and nuts.
  7. Fill mini muffin cups ¾ full.
  8. Bake for 12–15 minutes, until a toothpick comes out clean.
  9. Cool slightly and enjoy.
