Strawberry Cheesecake Bars 🍓🍰

Ingredients

Crust

  • 2 cups graham cracker crumbs
  • ½ cup (115 g) melted butter
  • ¼ cup sugar

Cheesecake Filling

  • 450 g (16 oz) cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt

Strawberry Topping

  • 2 cups fresh strawberries, chopped
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water

Instructions

  1. Crust
    • Preheat oven to 180°C / 350°F.
    • Mix crumbs, butter, and sugar.
    • Press into a lined 9×13-inch (23×33 cm) pan.
    • Bake 10 minutes.
  2. Cheesecake layer
    • Beat cream cheese and sugar until smooth.
    • Add eggs one at a time, then vanilla and sour cream.
    • Pour over crust.
  3. Bake
    • Bake 30–35 minutes until set. Cool completely.
  4. Strawberry topping
    • Cook strawberries, sugar, and lemon juice until soft.
    • Stir in cornstarch slurry, cook until thick. Cool.
  5. Assemble
    • Spread topping over cheesecake.
    • Chill 3–4 hours before slicing.
