
Strawberry Cheesecake Bars ππ°
Ingredients
Crust
- 2 cups graham cracker crumbs
- Β½ cup (115 g) melted butter
- ΒΌ cup sugar
Cheesecake Filling
- 450 g (16 oz) cream cheese, softened
- ΒΎ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- Β½ cup sour cream or Greek yogurt
Strawberry Topping
- 2 cups fresh strawberries, chopped
- ΒΌ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water
Instructions
- Crust
- Preheat oven to 180Β°C / 350Β°F.
- Mix crumbs, butter, and sugar.
- Press into a lined 9Γ13-inch (23Γ33 cm) pan.
- Bake 10 minutes.
- Cheesecake layer
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then vanilla and sour cream.
- Pour over crust.
- Bake
- Bake 30β35 minutes until set. Cool completely.
- Strawberry topping
- Cook strawberries, sugar, and lemon juice until soft.
- Stir in cornstarch slurry, cook until thick. Cool.
- Assemble
- Spread topping over cheesecake.
- Chill 3β4 hours before slicing.
