Ingredients

  • 1 lb (450 g) yellow or green string beans, trimmed and cut
  • 2 tbsp oil or butter
  • 1 small onion, finely chopped
  • 2 tbsp all-purpose flour
  • 1 tbsp sweet Hungarian paprika
  • 6 cups water or light vegetable/chicken broth
  • Salt, to taste

To Finish

  • ¾ cup sour cream
  • 1–2 tbsp fresh dill, finely chopped
  • 1 tsp vinegar or lemon juice (to taste)

Instructions

  1. In a pot, heat oil or butter. Add onion and sauté until soft.
  2. Stir in flour to make a light roux. Remove from heat and add paprika.
  3. Gradually add water or broth, whisking smooth.
  4. Add string beans and salt. Bring to a boil, then simmer 25–30 minutes until tender.
  5. In a bowl, mix sour cream with a ladle of hot soup.
  6. Stir sour cream mixture back into the pot.
  7. Add dill and vinegar or lemon juice.
  8. Heat gently without boiling. Serve hot.
