What Is Hungarian Túrós Batyu?

Túrós Batyu (pronounced TOO-rosh BAH-tyoo) translates to “Cottage Cheese Bundle.” It is a classic Hungarian pastry made from enriched yeast dough filled with a sweet mixture of túró (Hungarian cottage cheese), sugar, vanilla, lemon zest, and raisins.

The dough is folded into a small envelope, allowing a bit of the creamy filling to remain visible while baking. Once baked, the pastries are finished with a generous dusting of powdered sugar, creating the elegant look found in traditional Hungarian bakeries.

Although traditionally made with Hungarian túró, well-drained small-curd cottage cheese or farmer’s cheese works wonderfully as a substitute.

  • 500 g (18 oz) well-drained cottage cheese or farmer’s cheese
  • 100 g (½ cup) granulated sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 egg yolk
  • 2 tablespoons sour cream
  • 2 tablespoons raisins (optional)

For the Egg Wash

  • 1 egg
  • 1 tablespoon milk

For Finishing

  • Powdered sugar for dusting
