
🧆🥑 BAKED SALMON MEATBALLS WITH CREAMY AVOCADO SAUCE
Ingredients
Salmon Meatballs
- 1 lb fresh salmon, skin removed and finely chopped
- 1 egg
- ½ cup breadcrumbs
- 2 tbsp grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp fresh parsley or dill, chopped
- 1 tbsp lemon juice
- Salt & black pepper, to taste
- 1 tbsp olive oil
Creamy Avocado Sauce
- 1 ripe avocado
- ¼ cup Greek yogurt or sour cream
- 1 clove garlic
- 1 tbsp lemon or lime juice
- Salt, to taste
- 2–3 tbsp water (to thin)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix salmon, egg, breadcrumbs, Parmesan, garlic, herbs, lemon juice, salt, and pepper.
- Shape into meatballs and place on baking sheet. Lightly brush or spray with olive oil.
- Bake 12–15 minutes until cooked through and lightly golden.
Sauce
5. Blend avocado, yogurt, garlic, lemon juice, salt, and water until smooth.
