Ingredients

Crust

  • 1½ cups graham cracker or digestive biscuit crumbs
  • ¼ cup melted butter
  • 2 tbsp sugar (optional)

Lemon Mascarpone Filling

  • 8 oz (225 g) mascarpone cheese, softened
  • ½ cup powdered sugar
  • ½ cup heavy cream, cold
  • Zest of 1 lemon
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Topping (optional)

  • Lemon slices, berries, or powdered sugar

Instructions

  1. Mix crumbs with melted butter (and sugar). Press into a tart pan. Chill 15 minutes.
  2. Beat mascarpone with powdered sugar until smooth.
  3. Whip heavy cream to soft peaks and gently fold into mascarpone.
  4. Fold in lemon zest, lemon juice, and vanilla.
  5. Spread filling into crust and smooth top.
  6. Refrigerate 2–3 hours until set.
  7. Garnish, slice, and serve chilled.
