Creamy Chicken & Vegetable Comfort Soup
🛒 Ingredients
- 2 tbsp butter or olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 2 cups cooked chicken (shredded or chopped)
- 6 cups chicken broth
- 1 cup milk or cream
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp dried thyme or oregano
- Optional: parsley for garnish
👩🍳 Instructions
- In a large pot, heat butter/oil over medium heat.
- Add onion and garlic, sauté until soft and fragrant.
- Add carrots, celery, and potatoes. Stir for 2–3 minutes.
- Pour in chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until vegetables are tender.
- Add chicken, milk/cream, salt, pepper, paprika, and herbs.
- Simmer 5–10 more minutes. Taste and adjust seasoning.
- Serve hot, garnish with parsley if desired.
