Palacsinta (Hungarian Crêpes)

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups milk
  • 1 tbsp sugar (optional)
  • Pinch of salt
  • 1–2 tbsp oil or melted butter (plus more for the pan)

Instructions

  1. In a bowl, whisk eggs, milk, sugar, salt, and oil/butter.
  2. Add flour gradually, whisking until smooth and lump-free.
  3. Let the batter rest 10–15 minutes (helps make thin, soft crêpes).
  4. Heat a lightly oiled pan over medium heat.
  5. Pour a small amount of batter and swirl to coat the pan thinly.
  6. Cook 30–45 seconds until edges lift, then flip and cook the other side.
  7. Repeat with all batter.
