Grandma’s Golden Chicken & Rice

Ingredients

  • 4–6 chicken thighs or drumsticks
  • 1 cup long-grain white rice (uncooked)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 ½ cups chicken broth
  • 1 cup cream of chicken soup (or extra broth)
  • 1 tsp turmeric or ½ tsp curry powder (for the “golden” color)
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spread uncooked rice evenly in a baking dish.
  3. Add onion and garlic on top.
  4. In a bowl, whisk broth, cream of chicken soup, turmeric (or curry), salt, and pepper.
  5. Pour mixture over the rice.
  6. Place chicken pieces on top of the rice.
  7. Brush chicken with melted butter and sprinkle with paprika.
  8. Cover with foil and bake 45 minutes.
  9. Remove foil and bake 15–20 more minutes until chicken is golden and rice is tender.
