Grandma’s Golden Chicken & Rice
Ingredients
- 4–6 chicken thighs or drumsticks
- 1 cup long-grain white rice (uncooked)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 ½ cups chicken broth
- 1 cup cream of chicken soup (or extra broth)
- 1 tsp turmeric or ½ tsp curry powder (for the “golden” color)
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp butter, melted
Instructions
- Preheat oven to 375°F (190°C).
- Spread uncooked rice evenly in a baking dish.
- Add onion and garlic on top.
- In a bowl, whisk broth, cream of chicken soup, turmeric (or curry), salt, and pepper.
- Pour mixture over the rice.
- Place chicken pieces on top of the rice.
- Brush chicken with melted butter and sprinkle with paprika.
- Cover with foil and bake 45 minutes.
